Fresh and Easy Homemade Chips and Salsa

Whenever there is a get together, party or a dinner it’s good to have something to munch on while the “hungry visitors” are waiting for the main dish or event. This salsa and chips recipe is my go to for all these occasions. Not only is it deliciously fresh and crunchy, it’s an eye catcher with its vibrant colors. However, I do have to warn you because it’s highly addictive. Enjoy!

Homemade Chips and Salsa by Cassie Corbett

Easy Homemade Salsa

Ingredients

  • 3 firm roma tomatoes
  • 1 bunch of flat leaf parsley or cilantro
  • 1/2 onion
  • 2 cloves of garlic
  • 1/3 jar of deli-sliced pepperoncini
  • 1/8 jar of pickled, sliced jalapenos (or to taste)
  • tabasco (to taste)
  • salt and pepper (to taste)

Directions

  1. Prepare your salsa ingredients by finely dicing up tomatoes and onions, chopping or pressing the garlic, and trimming and chopping your fresh parsley.
  2. Squeeze the liquid from the pepperoncini into the diced tomato mix, then chop the pepperoncini and the pickled jalapenos into small pieces.
  3. Add salt, pepper and Tabasco to taste to the salsa and then add an additional 2 Tbsp of the liquid from the pepperoncini jar over it. Mix it all together and refrigerate! Serve once chilled.

Homemade Tortilla Chips

Ingredients

  • 4 soft flour tortillas (or any other type you like)
  • olive oil spray
  • salt
  • pepper
  • caraway seed (or other spices to taste)

Directions

  1. Preheat oven to 385 degrees F.
  2. In the meantime, cut the tortillas into triangles. Then spray a foil-covered baking sheet with oil, evenly and sparingly distribute salt, pepper and caraway seed on the baking sheet. Place tortilla triangles on top, then spray the top of your chips with oil and again evenly and sparingly cover with salt, pepper and caraway seed.
  3. Bake in preheated oven for approx. 15 – 20 minutes (this time will depend on your oven, each one bakes differently) until golden brown. Remove from oven and let them cool.
